Ingredients in Keto Chicken Stroganoff

Ingredients Notes

  • Chicken: For this one pot chicken stroganoff recipe, I used boneless, skinless chicken breasts. But it also works well with chicken thighs. (Try this Creamy Chicken Scampi Recipe)

  • Coconut flour: The coconut flour is used to lightly coat the chicken before frying. If you are allergic to coconut flour, or simply do not like it, it can be omitted. Just note that the sauce may not turn out quite as thick.

  • Onions: I like to use white onions or sweet onions, but you can use any onions you prefer.

  • Mushrooms: I used cremini mushrooms, but again, you can use any of your favorite mushroom varieties. (Try these Beef Stroganoff Burgers)

  • Heavy cream: The heavy cream gives the sauce a rich, silkiness. You could also use half and half, but the sauce will not be as thick. For a dairy free option, you can use full-fat coconut milk.

  • Sour cream: The sour cream adds a bright, fresh flavor to the sauce. You could also use creme fraiche or greek yogurt. For a dairy free option, use a plant based sour cream. (Try this Beef Stroganoff Soup)

  • White wine: Lighter white wines like Pinot Grigio, Sauvignon Blanc, or Viognier work best. While the alcohol cooks off and there is no alcohol left in the finished dish, you can substitute extra chicken stock if you do not want to cook with wine. You could also use cooking sherry, marsala, or vermouth. (I get all my wines here)

How to Make One Pot Creamy Chicken Stroganoff

Step by Step Instructions

STEP 1: In a small bowl, combine the salt, pepper, garlic powder, onion powder, and paprika. Sprinkle the seasoning mixture over both sides of the chicken cutlets.

STEP 2: Add the coconut flour to a shallow bowl. Lightly dredge each piece of chicken in the coconut flour and set aside.

STEP 3: Heat 2 tablespoons of the butter and the olive oil in a large skillet over medium heat. Once the butter has started to melt, add the chicken to the pan. Sear the chicken cutlets until they are golden brown on both sides, about 4 minutes each side. Remove from the pan and set aside.

STEP 4: Add the remaining 3 tablespoons of butter to the pan. Once the butter has melted, add the onion, and cook until they are translucent. Add the garlic and cook until it is fragrant.

STEP 5: Add the mushrooms to the pan and cook until they have released their liquid and start to caramelize.

STEP 6: Deglaze the pan with white wine. Use a rubber spatula to scrape up and mix in any browned bits that are stuck to the bottom of the pan. Mix in the Worcestershire sauce and Dijon mustard.

STEP 7: Add the chicken broth and bring to a boil. Reduce the heat to medium-low, mix in the heavy cream and let simmer until the sauce has reduced slightly and begins to thicken.

STEP 8: Stir the sour cream into the stroganoff sauce and mix until well combined. Let simmer for 5 to 10 additional minutes. Taste, and add salt and pepper, if needed. Garnish with chopped fresh chives or parsley.

STEP 9: Add the chicken, and any juices back to the pan. Simmer for 5 additional minutes to heat the chicken through. Garnish with fresh chives.

Recipe Tips and Variations

  • Storage: Store leftover keto chicken stroganoff in an airtight container in the refrigerator for up to 4 days.

  • Reheating: I recommend reheating this in a pan on the stove top. Adding a splash of heavy cream and/or chicken stock will help it come back to life.

  • Use pork: This dish is also excellent made with thinly cut pork chops in place of the chicken. Season and cook them exactly as you would the chicken.

  • Use beef: Instead of the chicken, add some cooked ground beef to the sauce for a keto beef stroganoff variation. Alternatively, you can use thinly sliced steak and season it and pan-sear it.

  • Make it Dairy Free: For a dairy free option, substitute the heavy cream with full-fat coconut milk and the sour cream with a plant based, dairy free sour cream alternative.

What can I use in place of coconut flour?

You can omit the coconut flour altogether. Just note that the sauce might now be quite as thick.

Can this be made with chicken thighs?

Yes! You can substitute boneless or bone-in chicken thighs.

Can this be made without alcohol?

Yes, although the alcohol will fully cook off in the dish. You can substitute it with extra chicken stock.

  • ¼ cup coconut flour (I use this brand)
  • 5 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 12 ounces cremini mushrooms, sliced
  • ½ cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 ½ cups chicken stock
  • ½ cup heavy cream
  • ¾ cup sour cream
  • Finely chopped fresh chives, for garnish

Instructions
