  • Broccoli: Broccoli is the star of the show for these Crispy Parmesan Broccoli Bites. I recommend using fresh broccoli. Frozen broccoli is too wet and the breading will not stick.

  • Almond flour: I recommend using a super fine almond flour or a blanched almond flour.

  • Parmesan cheese: When it comes to cheese, freshly grated it always the best option.

  • Mayo: The mayo helps the breading stay on the broccoli and also adds a delicious creaminess to the broccoli bites when you bite into them.

  • Spices: These are seasoned with onion powder, garlic powder, paprika, salt and pepper. It makes them incredibly flavorful.

How to Make Crispy Parmesan Broccoli Bites

Step by Step Instructions

STEP 1: Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.  Set up two shallow bowls. In one, place the mayonnaise, and in the other, whisk together the almond flour, parmesan cheese, baking powder, paprika, garlic powder, onion powder, salt, and pepper. Coat each broccoli floret in the mayonnaise.

STEP 2: Next, coat each broccoli floret in the low carb breading mixture until evenly coated all around.

STEP 3: Line the coated broccoli florets in a single layer across the baking sheet. It may be necessary to use two baking sheets so as not to crowd the broccoli. If your tray is too crowded, the broccoli will end up steamed instead of crispy. Bake for 25 to 30 minutes or until the breading is golden brown and crispy and the broccoli is crisp tender.

  • Nut free: You can easily make these nut free by swapping out the almond flour for an equal amount of crushed pork rinds.

  • Use cauliflower: These are also delicious made with fresh cauliflower florets. Simply swap the broccoli for cauliflower and follow all the same steps.
